Madras Chicken Curry


6 chicken thighs
1 large yellow onion
3 tbsp. olive oil
1 red pepper (1/4 inch strips)
1 green pepper (1/4 inch strips)
1 yellow pepper (1/4 inch strips)
2.5 cups crushed red tomatoes
1 tbsp ground cumin
1 tbsp madras curry powder
1 tsp cayenne pepper (to taste)
pinch cinnamon
pinch ground clove

White rice
Mango Chutney


1. Sautee chicken, onion and olive oil in a pot
2. add peppers
3. add tomato
4. add spices
5. simmer for 1 hour minimum
