Carolina Style Smoked Pork Rub

Nice peppery rub and wet mop for a hickory smoked 6-lb. bone in pork shoulder.

Dry Rub
– 3 Tbsp coarsely ground black pepper
– 3 Tbsp firmly packed dark brown sugar
– 3 Tbsp paprika
– 2 Tbsp coarse kosher salt
– 1 tspn cayenne

Wet Mop
– 0.5 cup apple cider vinegar
– 0.25 cup water
– 2 Tbsp Worcestershire sauce
– 1 Tbsp coarsely ground black pepper
– 1 Tbsp coarse kosher salt
– 2 tspn vegetable oil
