Garlic Home Fries

Ingredients:

  • Kosher salt
  • 2 pounds large red bliss or Yukon gold potatoes, cut into 1/2-inch cube
  • 2 tablespoons unsalted butter (or bacon fat)
  • 2 tablespoons extra-virgin olive oil
  • 1/2 onion, chopped
  • 1/2 teaspoon paprika
  • 1 clove garlic
  • 1/4 cup fresh parsley
  • Freshly ground pepper

Preparation:

1. Bring a large pot of salted water to a boil.
Add the potatoes, cover and cook over medium- high heat until just tender, about 6 minutes; drain.


2. Heat the butter and olive oil in a large cast-iron skillet over medium heat; add the potatoes and spread into a single layer. Cook, undisturbed, until they start browning on the bottom, about 5 minutes. Add the onion and sprinkle with the paprika; flip the potatoes and cook 5 more minutes. Stir once, then continue cooking until the potatoes are mostly golden brown, about 5 more minutes.


3. Meanwhile, roughly chop the garlic, pile
the parsley on top and sprinkle with 1 teaspoon salt. Chop and mash together until finely

4. When the potatoes are done, add the garlic mixture to the skillet and toss to coat; cook until heated through, about 2 minutes. Season with salt and pepper.

Spinach & Mushroom Quiche

Quiche I threw together on Mother’s Day 2022

Ingredients

  • 1 prepared 9-inch single pie crust
  • 6 eggs
  • ¾ cup 2% milk (can also do half cup skim + quarter cup heavy cream)
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon minced garlic
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ⅛ teaspoon ground nutmeg
  • ½ (10 ounce) bag fresh spinach
  • 1 (8 ounce) package sliced fresh mushrooms
  • ½ yellow onion, sliced
  • ½ (4 ounce) container crumbled feta cheese
  • ½ (8 ounce) package shredded Swiss cheese, divided

Preparation

  1. Preheat oven to 375 degrees F.
  2. Fit pie crust into a 9-inch pie dish.
  3. Wilt the spinach by covering in a large frying pan with 2 Tbsp of water or chicken broth. 7-10 minutes.
  4. While spinach is wilting sauté mushrooms and onion in a large frying pan until onions soften and mushrooms begin to release. 7-10 min
  5. Drain spinach and combine with mushrooms and onion mixture. Add garlic to frying pan and combine for 1 minute.
  6. Cool sautéed vegetables in a bowl and combine with feta cheese.
  7. Whisk eggs, milk, parsley, salt, black pepper, and nutmeg in a bowl.
  8. Spread spinach-mushroom mixture in the prepared pie dish; top with half the Swiss cheese.
  9. Pour egg mixture evenly over the filling, swirling egg mixture in bowl to spread seasonings through the eggs; top the quiche with remaining Swiss cheese. Place quiche on a foil lined baking sheet.
  10. Bake in preheated oven until the quiche is lightly puffed and browned, 40 to 45 minutes. A toothpick inserted into the center of the filling should come out clean. Cool for 30 minutes before serving.
